Privacy policy
Required as soon as you process personal data: the GDPR obliges you to tell people what you collect and why (articles 13 and 14).
Cookie policy
What your consent banner links to. It has to match what the banner actually sets — and stay in step when either changes.
Terms of sale & of use
The conditions your customers accept. Which means the ones in force on the day they accepted, not the ones online today.
Imprint
Company identity, registration number, contact. Expected of any business presenting itself online in the EU.
Your subprocessors change. Your customers have to be told.
If you process data on behalf of your customers, you have to inform them before adding or replacing a subprocessor, and give them the chance to object (GDPR, article 28). And the people whose data it is have to know who receives it (articles 13 and 14). Two separate duties, and almost nobody meets them by email.

An overwritten page proves nothing
Most sites replace their privacy policy and lose the previous one. When a customer — or an authority — asks what your policy said at the moment someone consented, the page online today does not answer the question.

Every version carries its date. Nothing is overwritten in silence.
Every version kept
Superseded versions stay stored and readable — the current page replaces none of them.
Produce any past version
Answer "what did it say last March?" from the record, not from memory.
